Mexican style Nachos
Ingredients:
250 grams finely sliced chicken breasts
2-3 Tablespoons Mexican peri-peri sauce or Tikka sauce
1 Tablespoon smoked Paprika
4-5 Tablespoons finely sliced pickled Jalapeños
1 finely cubed tomato
1 finely chopped onion
1 jar hot Salsa sauce
Garlic powder
Perinaise ( mayonnaise with peri-peri)
Nacho chips (Hot)
Grated cheddar cheese
Finely chopped lettuce or parsley
Salt and pepper to taste
Method:
Marinate the chicken pieces in Aminas Tikka or Mexican sauce and add some salt.
Fry the chicken in oil, with finely chopped onion, garlic powder, when chicken almost cooked, add 2 to 3 tablespoons of peri-peri sauce, stir in, finally add a dash of perinaise sauce.
Will have a bit of creamy consistency.
In an ovenproof tray:
Lay nachos, spread salsa sauce over chips, sprinkle a bit of finely chopped tomatoes. Sprinkle pickled jalapeños, Sprinkle chicken pieces, Sprinkle cheddar cheese, then start another layer of chips repeating above layers. Bake in hot oven for 6 minutes.
When it comes out Sprinkle finely chopped lettuce (optional) or parsley.
For a side dip Mix avocado pears with salt and pepper. And also use smooth cottage cheese.(optional) Enjoy
