I weighed in yesterday. Let's put it this way - my eyes widened and I gasped in as my hand went to my mouth and said "Holy sh..."
Yeah. Not good. And it's my own fault. I do really well during the week. Then the weekend comes along and that "all or nothing" mindset creeps in and I undo all of the good I've accomplished that week. So I need to be more mindful of how I'm eating on the weekends.
For lunch today I had beef liver and butternut squash noodles. They were DELICIOUS! Found them at the supermarket in the produce section, already cut into 'noodles' and I couldn't resist picking them up. I sauteed them in a pan with a little butter and a sprinkling of brown sugar. So scrumptious.
This is what they look like. I'd never seen them before.
