We have started trying something new as we both have to change our diets. I am on a low fat diet and hubs is a diabetic and must watch his sugar and red meat intake.

Last night we had grilled chicken on the barbeque, lemon and coriander couscous and a Morrocan style salad which I made with chick peas, peppers, cumin, mint and parsley. It was absolutely delish.

I've just had some left-over mushroom rice and Madras sauce which I got from the Indian last week, but I added some prawns to it from my freezer. Deeelish!

A stir fry: onions, chillis, green pepper, mushrooms, celery, coarsely chopped tomatoes with some of their juice and black beans served over rice. And a ciabatta roll, and mousse cake for dessert with a cup of green tea.

Steak & Kidney casserole. Fry onion and mushrooms in pan, toss steak and Kidney in Tbls plain flour and add to onions and mushrooms, prepare appropriate veg (leeks, parsnips, swede, celeriac and carrots) and add to pan. Make stock and pour over ingredients in pan. It will thicken because of the flour and as it boils and thickens scoop it all out into a casserole dish or slow cooker and cook through thoroughly. Bon Appetite everyone.
