Duck Breasts

Hi all.

I have bought two Duck breasts.

I'm going to sear them first in a dry pan skin down, then in the oven.

How long do I have to put them in the oven for, if I like them well done please.

And do I just cook them without wrapping them in foil?

I have not made duck in eons. What I do remember is that there is a lot of grease splatter in the oven.

I hope someone gives you directions, now you have me craving duck.

I do believe that you are located in Canada Adanac?
Is Duck a quite normal dish there, just as it is here in the UK?
Mind you, I very rarely have that dish.

Don't wrap it, cook it on a rack to allow the grease to run out or you will have a floppy flabby pale skin on it.

Duck is not often on the everyday menu over here. Mostly reserved for special occasions in fancy restaurants. Likely because it is quite expensive.

Another poultry dish not often served is cornish hen, same reason which is cost.
