It seems that the better quality the cheese, the more crumbly it is. Some great suggestions though. Thanks people.

No, I manage to slice cheese with a sharp knife, and as I told you, slice the cheese in a forward motion of the knife.

I tried that last night, it did cut it but the cheese stuck to the knife and crumbled when I tried to pull it off. Maybe I should use a smaller knife. I will do a test later today.
