Match point we found most important to us was getting one made a traditional shaped loaf not higher than it was long, if that makes sense. You need to decide what you want it to do really as some are easier to add ingredients near end of kneading than others, ours isn't very good at that but the shape was more important than adding things.Re: Dough in breadmaker risen too high!
