I seem to be going of Meat

Hi all.

I seem to be going of Meat, has any one got some tasty Vegetarian recipes as Main meals that you would like to share with me.

I like some of the simpler things we make, mushroom risotto, just add mushrooms, frozen peas and onions to the pot with arborio rice, graze some parmesan on top lovely.

Any left over veg in a pan with eggs and cheese and you have a lovely omelette.

Spaghetti with chopped veg and Parmesan again lovely.

I made a cheese soufflé the other day that was tasty. I get most of my recipes from BBC food website or yummly.

My husband went off meat last year too, he's back on it a little but happily lives without it most of the time.

I too do t like a lot of meat, preferring fish, eggs, cheese

However I live with too big meat eaters so I have to be crafty with the non meat eats

Something like a quiche I can get away with easily, with salad and potatoes or chips and beans, as well as cheese and onion pie, omelettes as well pass no remark

So for true veggie, I turn to Indian and Aisan dishes , curries and dahls, etc etc

Any curry can be turned veggie by just using chickpeas or butternut squash instead of chicken

I like stuffed peppers and they are so easy to make, now you can get flavoured cous cous . I like to stuff them with chopped tomato, tomato and onion ( or garlic) flavour couscous ( which can be hydrated by mixing with boiling water ) then cover it with grated cheese before baking in the oven.

You can add anything you like to couscous .....even a bit of bacon or fish if you are not being completely vegetarian.

I've gone off meat too, or rather my tum has.
You can't beat beans on toast with melted Mature Cheddar on top

Jamie Oliver has some fabulous recipes, I'm not vegetarian but only eat Chicken breast, lean minced beef and fish so if I fancy a no meat day I'll get an idea from the link below.
