Well, I ended up making oyster stuffing, which I am freezing and saving for Sunday supper. I love oyster stuffing and haven't had it in quite a while and we're having baked chicken and mash on Sunday, so the stuffing would go perfect with that.

I don't feel too awful bad, however, as two came in a pack and I only ate one. Gave the other one to my kid.

The worst part of deep-fried foods - besides the calories, of course - is the fat used for frying. If you make things like that at home, at least you know what type of oil you're using. When you buy them from a restaurant, you don't know if they're using heart-healthy oils or loads of vegetable oils that are full of saturated and/or hydrogenated fats.

Yes I agree with you Linda, that's why I said they are greasy, because mine was a bought one from Sainsbury's.

Today its a roast of:

One Chicken breast between us, Two roast potatoes, Baked Onion, Carrots, Swede, Parsnip and Gravy.

Oh! Well that explains it, then, frozen spring rolls are already pre-fried. Okay, I thought maybe you'd made your own and baked them instead of frying them to make them a little more healthy.

That sounds delicious. The baked veg sounds perfect, I think I'll do that for lunch on my next day off. Just dump a whole bunch of veg into a pan and toss 'em in the oven. Nothing better than roasted vegetables, adding a little butter, salt & pepper and then roasting them to browned perfection. I like it when the butter caramelizes a little bit onto the veggies.

I was craving pasta, so I had one cup of buttered noodles and roasted carrots, onions and mushrooms.

For dinner I'm having a seafood wrap and maybe a salad or soup or something to go with it.

fresh salmon for me tonight,,,grated carrot and apple...but forgot to buy an avacado....

Avocados are crucial!

I had a bad 'cado experience recently. Bought 2 big beautiful Florida avocados (I prefer them to Hass) and although the skin was still a pretty bright green, the insides of BOTH of them were brown and disgusting. I was seriously disappointed. But then, like an idiot, I bought them from a store that's notorious for 'hit or miss' avocados.

I've decided I must eat more Fish.
Last week we did have Fresh Cod pieces also one day last week we had Sea Bass.
