Ooooh Julie, he doesn't like mushrooms but the tomatoes may well be added the next time I make it. I imagine that would bring a zing to the dish and would meet with his approval. I daren't put spring onions in for breakfast. Too Lunchlike for his breakfast but tomatoes yes.

In Italy it is called Frittata, fried in olive oil
You can use bacon sliced into pieces, and tiny bit of Garlic
I always add sliced fresh tomatoes as well

I sometimes make something similar, but just with onion, potato, cheese and a few peas. And the egg of course. I just call it a Spanish omelette.

Don't like cooked cheese???

It's my downfall. I absolutely love it. Whenever I'm away on holiday I always crave cheese on toast.
