Lemony Lemon Brownies

Hi everyone, just found this recipe online so thought would try it out as I love all cakes and desserts lemony, the more lemon the better. They came out really good and although I filched a small slice off the corner of the tin after just taking it out of the oven when to most sensible people it was really much too hot, my punishment for my greed resulted in almost burning the roof of my mouth off in the process!!
it was worth it though because it tasted really nice.

So, to resist any further temptation, whilst they are cooling, thought would share the recipe with anyone on here who haven’t tried the recipe yet.

If you love Lemon Bars, you will love these, they are moist, fudgy, chewy and lemony heaven.




Preheat oven to 350, 180, Gas 4.


Grease an 8 x 8 tin (that’s the size I have) it makes 16.


Zest and Juice two Lemons (three if you want extra for decorating the glaze later)

INGREDIENTS


115 grams Softened Butter

105 grams Plain Flour

168 grams Granulated Sugar

2 Large Eggs

2 Tablespoons of Lemon Juice

2 Tablespoons of Lemon Zest

1/4 Teaspoon of Sea Salt
(didn’t have any so used ordinary salt!!)


FOR THE LEMON GLAZE


140 grams Icing Sugar

8 Teaspoons of Lemon Zest

4 Tablespoons of Lemon Juice
(ran out of Lemons so used bottled Lemon Juice)


In your mixing bowl, (using a paddle if you have one) beat the flour, sugar, salt and softened butter until combined.


In a separate bowl, mix your eggs, lemon juice and lemon zest until combined.


Pour it into the floury mixture and beat until smooth and creamy.


Put into the tin and bake in the oven for between 25-35 mins. (it will start to turn golden brown around the edges when done. Don’t overbake as recipe says they will go dry)


Allow to cool completely. (not like me. lol)


Sieve the Icing Sugar into a bowl and mix with the lemon zest and lemon juice. Spread this over the brownies with a rubber spatula and sprinkle with extra lemon zest if you have any, for decoration.

Hope you enjoy if you try this. I'm having two with my cuppa this afternoon.

It sounds much like the recipe I use - except I use cups instead of them gram thingies!!
I also creamed the butter and sugar together first before adding the eggs etc. No real reason why except it's the way I've always done it.
They're good. In fact they're real good!

Sounds very nice I might try it with bottled long life lemon, I'm too allergic to have a real lemon in the kitchen.

They sound really good. We are very fond of anything lemon here, or lime. Fortunately we have both lemon and lime trees in the garden and I do try to make use of them. We give them away to friends and neighbours too.
