I agree about the olive oil. Healthy but pretty rank when frying mushrooms, they make me gag a bit tbh. I prefer them fried in butter.

Lovely large flat field mushrooms newly picked in the morning,. and fried with bacon. does it for me every time .

I don't add any oil , I simply cook them in frying pan as they are . I'd love to go on a course and be shown which are safe to pick and eat .

That sounds absolutely delicious.

And, in my opinion, mushrooms should be sauteed in butter, not oil. Blech!

I fry mine in just a small amount of butter with one clove of garlic, salt and a pinch of curry powder.

I just love Mushrooms ! Here are a few of my favourite ways of serving them:-

Raw in salads,
Mushroom and Garlic Soup with hot crusty bread.
Mushroom and parma ham risotto,
Mushroom omelette
Tossed in butter with bacon and egg
Creamed and on toast
Mushroom and cheese toasties.
In stews.
Pickled - need tiny button type for doing that.

I use all varieties - Oyster, Portabello, Horse, Porcini and, if I am not serving alcohol, shaggy inkcaps.

Now it's a vegetable I normally detest! However, I do enjoy canned mushroom soup, or my home made one, if I blend it well.

I did recently chop some up finely to add to my chicken casserole. I think it's the slimy texture that turns me off more.

I like them whole in butter sauce! When you cut them the juiciness shows.
