Zucchini Lasagna.

We had a friend taking care of our garden for us for a couple of weeks and he let the zucchinis go wild. It's not such a bad thing as it gives me a chance to make zucchini lasagne. This is one of my favourite recipies. Not exactly a light meal. Dinners going to be late tonight.

It sounds a little like moussaka Kev, I sometimes make it with courgettes. There's an awful lot of Parmesan in there, it will be pretty smelly!

Looks and sounds delicious, Kev, will definitely give it a try - I love Italian food.

Hi

I you love Italian food get yourself a pasta machine.

Really easy to use, dead cheap to make and much nicer.

Yes I've often used courgette in place of pasta, it's delicious and cuts out lots of calories. I use aubergine too, even better in my opinion.

Bigger ones make lovely spaghetti too if you spiralize them.

"Spiralize" That's a great word Julie and a good idea. My wife bought a "spiralizer" I'll have to give it a go.

Maybe it's my taste buds, but I find zucchini, asparagus, squash, avocado and leeks all completely bland and virtually tasteless. I ate a lot of hot curries when I lived in Brum and my mate reckons it's spoiled me for what she calls "subtle" tastes. I think it's a case of the Emperor's new clothes myself.

I do make my own pasta, Swimmy, and you are right it is so much nicer than shop bought.
