Hi everyone, still on my diet so thought I deserved a treat and saved all my calories to have this meal on Friday. I find that if I just cook something for myself it doesn't tempt me to have the same as He who must obey has for dinner.
This recipe was soooo simple to do but very filling. I even had a dessert! (next recipe following this) which had me almost licking the bowl it was so delicious.
Anyway here with the recipe which hopefully you will love if you try it.
EGG IN A POTATO
Just For One! Egg In a Potato (Simple but Filling)
1 x Large Potato
1 x Medium size Egg
A handful of shredded Cheese, (any kind as long as it melts)
Salt and Pepper.
1....Cook your potato by poking holes in it with a fork or
knife for one hour in the oven or prick all over with a
fork again with a fork or knife and cook on high for 7
minutes in microwave.
2....When you happy it's cooked enough, cut the potato in
half length ways so you have a lid.
3....Scoop out the potato from the lidded half. (you can keep
the flesh for another time but it will not be used for this
recipe) Make sure you don't scoop out too much or your
lid will be too floppy to hold the ingredients or it could
tear if too much potato taken out.
4....Put 1/2 the shredded cheese into the bottom of the lid.
Crack the egg into a small bowl and carefully pour it into
the lid, sprinkle with salt and pepper and then
sprinkle more cheese on top of the egg. Gently put the
bottom half of the potato onto the cheese/egg filled
top half of the potato which you need to have sitting on a
preheated oven tray.
5....Bake in an oven on 175C for 15-20 minutes depending
on how you like your egg done. I baked mine for 20
minutes and the white was firm and the yolk slightly
runny.
That sounds really good, I might give it a try one day. I have to say I was slightly disappointed when I read that the potato is cut in half. I thought the egg was somehow going to appear inside the potato when cut open.
