Beer Chicken aka Butt Chicken
This is a new recipe I have recently discovered and it really is very good. I bought the actual beer chicken trivet off the internet but you can use a roasting tin.
1 whole Chicken
1 Can lager or beer
2 tsp mixed herb
1 tsp black pepper
1/2 tsp salt
2 tsp olive oil
1 lemon
Cut lemon in half insert into chicken cavity. Squeeze juice of other half into a cup/jug mix with the pepper, salt, oil, mixed herbs. Coat the chicken with mixture inside and out.
Insert can of beer (taking out a few gulps first) into the birds cavity. Place into a deep pan or roasting tin to catch the juices pop in oven (gas 4) or BBQ till cooked. Approx 2 hours in the oven depending on size of chicken. [IMG]
