Bubble & Squeak

Does any one make Bubble & Squeak with their leftovers?
I have never done it before, as we don't have a lot of leftovers.

Do you just mash the vegs up and fry in pan, or do you make burgers with it etc?

I would be interested in ideas please.

I sometimes plan it as a monday meal made with brussel sprouts fantastic...

Well always potatoes, but I tend to make the veg fresh because I like it so much and can't wait for leftovers. Cabbage is the main veg but you can add carrots, broccoli sprouts... in fact any veg you would steam or boil.
I sometimes add a chopped onion to the fry pan, to soften, and then mix with the rest of the veg to fry together.

Coo, I haven't had that since I was a kid, susie.
Mum always used to give us that.
Don't now what she put in it though, we just ate it.

When we have a roast we always do double veg to make B&S the next day. Particularly good if you have sage and onion left or bread sauce, just mash the whole lot together and fry until it has a lovely crispy layer on the outside. Serve with cold meat or fried eggs or, indeed, rashers of bacon. Delicious.

I think it's much nicer with sprouts than cabbage - fried up with chopped potatoes, onions and bacon. Yum!
