Scones are like biscuits here but biscuits tend to be more flaky and often layered, while scones are more crumbly. Biscuits are almost always round.
The gravy for biscuits is savory and starts with a butter (lots) and flour roux that is then thinned with milk, and seasoned with a salt and a heavy hand of black pepper with a sprinkling of red. Finely cooked crumbled sausage (for us vegetarians a spicy soy type) is added to the gravy and it is simmered to a fairly thick consistency. The sausage gravy is then poured over open biscuits. It is rich, delicious, and funds summer homes for cardiologists.
Grits are also a savory dish made up of coursely ground dried white corn. The dried grits are cooked with milk or buttermilk, and salt and pepper. Down here we fold in shredded gouda cheese. It is often served with steamed shrimp. Yes, for breakfast. Grits are a traditionally southern dish. Most Californians have never tried them.
As for me, I don't eat breakfast!
But I do like a midnight snack here and there, so off to the pantry I go ....
