Honey and mustard dressing with a drizzle of balsamic vinegar. I don't like the taste of salad cream.

I use a fresh egg yolk and a little salt and pepper then gradually blend in small amounts of extra virgin olive oil till it becomes a light and fluffy mayo. Then at the end add a few drops of vinegar. Its best if you can chill it before serving it. Thats how the Belgian side of my family used to make mayo however they used vegetable oil but obviously that was before heart attacks were invented.

If I dont have time to do this or havent got any pre made in the fridge I just use a small trickle of extra virgin olive oil as a dressing.

My favourite is iceberg lettuce onions apple and sultanas tossed in Hellmans light mayonnaise...really nice
