Your favorite chicken dishes

I have a bunch of boneless/skinless chicken breasts and would like some new ideas of what to do with them.

What do you do with yours?

Cook them in cider with apple, celery & onions. When cooked, thicken the sauce with double cream.

Roasted, chopped up into cubes, sweet and sour sauce with rice.

Stuff with a mixture of Stilton, tomato, mushroom and/or onion and roast in oven for half an hour. Wrap streaky bacon round, if liked, before cooking.

Oh my gosh, this sounds heavenly!

And Victors Mate, we have something similar here called Shake & Bake. You just shake the chicken up in a bag with the seasonings (of whatever flavor you choose) and then bake it.

Forgot to suggest the classics of Chicken Kiev or Chicken Cordon Bleu.

Regarding cooking them in cider etc... I normally do that with a whole chicken. Brown all over first and then cook breast down in the cider etc..

Here's an easy and tasty chicken dish called 'Lemon Chicken', it's very light and high on flavour.

You need 4 chicken breasts, skin on
2 tbsp olive oil
2oz butter
1 medium onion
2 garlic cloves
Rind and juice of 1 lemon
200 ml or 7 fluid oz tub of creme fraiche
150 ml or 5 fluid oz chicken stock

Drizzle the chicken with oil, roast for 20 mins until golden, 400F or 200C
Melt butter and fry onion and garlic until soft but not browned.
Add lemon rind and 1 tbsp of juice.
Bring to boil, stir in the creme fraiche and stock.
simmer 4-5 mins, stir in some chopped fresh herbs or whatever you have.

Serve with small potatoes and green veg.

I started making this years ago, the children used to love it and daughter had to learn the recipe to make herself when she left home.
