Oh my, they look absolutely yum! I'm always into recipes using up left over veggie, I always make far too much for just two.
Last night I did Bubble and Squeak the old fashioned London way and had it with sausages and a fried egg Seventh Heaven.
So your recipe is a definite hit with me for a breakfast for he who must obey. It's a complete meal on it's own.

Aysa, the best way to find out is to make some and freeze a couple. If you can freeze quiche I am sure it would be safe to freeze these, but uncertain of how safe it would be to reheat them, if you want them warm.
