My Daily Bread

Now we are in the warmer months I decided to start up a new Sourdough Starter culture. Just rye flour and water mixed and fed regularly with more rye flour and water. After 5+ days it has gone through various stages and ended up full of natural yeasts and lactobacteria. That done it can be used to make great healthy sourdough bread.

This is the loaf I made from it:


I also made a nice batch of English Muffins using a recipe I got from the winner of ITV's "Britain's Best Bakery" show a year or two ago. A bakery that I spent a week working with to gain more experience. Was well worth it.

They do look lovely Realist. Well, actually I lie.
I'd love to eat the loaf but the muffins, although perfect in shape, leave me cold. I've never liked them, sorry.

Oh, but do pass me the loaf through the screen - please - I'm drooling. Where's the tongue hanging out smiley when you need it )

I neglected to state what that loaf actually was.

It was a blend of good white flour and a high proportion of dark rye flour and spelt flour with around 68% hydration (the quantity of water to total flour amount). The starter culture used as stated was also comprised of dark rye flour so there was a lot of rye which gives it the wonderful deep nutty flavours. Makes great toast.

It's a shame you don't like English Muffins. Out of all the various breads I can make, these are the ones that friends and family always request the most. They are lovely and buttery and perfect with a poached egg on top

By the way I loved that Britains Best Bakery show, I hope they do it again.

Realist I love most kinds of bread... apart from the white sliced bread that many still eat, and yours looked lovely!
I am going to have to sue this forum, because if you and Meg don't stop posting photos of your lovely home made bread, I will need to go on a diet!
