Mushrooms

Mushroom are delicious, except recently when I found out the commander in chief had changed to frying them with Olive Oil (healthy she said). Ruined the flavour methinks.

Anyone love mushrooms? Any suggestions for cooking?

Ooh, that sounds rather scrummy, Meg.

Re: Mushrooms

I add them raw into salads, really nice.
The other day I went out for breakfast but you couldn't taste the mushrooms as the guy must have cooked them in cheap fat as that's all I could taste.

Re: Mushrooms

Not keen on them raw but if you have to cook them in oil add a little butter for taste at the end if cooking helps. If you can cook them in butter they are lovely.

I tend to microwave them these days as its quicker and safer. On toast they are fabulous. My husband prefers the brown ones but I like the whites, particularly the Portobello variety which I will often have as a burger in a bun very yummy that is.

Re: Mushrooms

Can't stand them as a foodstuff but fungi are one of my favorite photography subjects.

Re: Mushrooms

Do any of you use dried Porcini mushrooms? They have a strong flavour and smell strong when re-hydrated but they taste good.
I was never a keen fan of mushrooms but I now use the porcini for risottos and mushroom sauces. I add a few of any other kind of mushrooms for texture.
