Tough question as there are so many variables. Distance-speed -light-let alone . For example if at a raptor centre when the above is known then lens choice and camera settings can be accessed.

I have my camera set so the shutter won't work unto subject in focus but have used shutter and or aperture priority, manual mode erm? not really ideal too slow to adjust.

I would love to improve my skills.

I only have a Sony Cybershot bridge camera.

I did venture once to a local camera club, but was totally out my depth.

Are there any good online sites to learn the basics?

You don't say what basics , the camera settings or how to take a photo to get the best picture.

The latter depends on what you want to photograph. If you could be more specific then it makes it easier to try and help

I should read my cameras manual, rather than just leaving it on ia all the time.
