Potatoes

Hi all.

I'm having battered fish this week for dinner, but i'm fed up with having homemade chips with it. Any ideas what else I can do, apart from Salad?

I was thinking of Jacket potato.

How about boiled and then sliced and sautéed?

Duchesse potatoes go nice with fried food, and they can be made early on and left in the fridge before putting in the oven

I like to buy the ready prepared crispy potato slices in Morrisons, and cook them in a heavy oven tray, so they crisp nicely! Gorgeous with cheese sprinkled on top, and I serve with chicken kiev now, rather than the previously served mashed cheesy potato, put back in potato halves.

You might also try the following for twice baked potatoes.

1 med-large russet potato for each diner. Lightly wash, dry off,and rub with your favorite veg oil. Sprinkle with salt and bake in 400 F (205 C. )oven for 75 minutes or until done.

Meanwhile, fry 1+ 1/2 pieces of bacon for each potato. Set aside to drain and cool.

Shred 2 or 3 tablespoons of your favorite hard cheese for each potato. I prefer an extra sharp cheddar but you may have a different favorite. Even a small amount of Blue cheese can be lovely.

When potatoes are done and cooled very slightly, make a slice down the side and scoop out the interior into a bowl. Add crumpled bacon, cheese and salt to taste. Mix well. Pop back into the oven and bake for another 15-20 minutes or until slightly browned on top.
Serve within 10 minutes.

Opps I just now noticed an error in my above post. I forgot to add that after mixing the cooked interior of the potatoes with the bacon and cheese you will need in re-fill the potato jackets with the mixture prior to baking
