Lemon Curd.

I tried this morning to make my own lemon curd. After following the recipe to the word and letting the mixture cool it is still very soft. Too soft for making tarts Does anyone know how I could maybe stiffen the mixture up? I'm thinking that there was too much juice in the lemons I used.

Try mixing in some cornflour.

You can do as Uj says or you can take a chance and recook it for a few minutes. I've done both in the past with success but I've heard others say it was a disaster.

I tried the cornflour but I think I used too much and finished up with it going too thick. What I did in the end was to bake them with the oven fan on. They turned out nice. The homemade lemon curd is quite tangy but nice.

Glad you found a way round it Kev nothing nicer than a homemade curd. My lot like banana curd and lime curd. Great favourites here.
