Plums

We have two plum trees in the garden and this year they are overloaded with fruit. One tree, along with the neighbours, we have already harvested most fruit from. This morning I picked just over 12kg of fruit from the second tree and with it I have about the same amount of rotten or over ripe fruit. My wife is going to freeze some and also experiment with some in the food dryer. I'm going to make some juice.

Get yourself a large (glass) container (kilner jar) with a sealable lid. Wash and dry the plums, place in kilner jar. purchase (cheapest bottle possible) of Brandy and a 1 kilo bag of sugar. Pour whole bag of sugar over plums and as much of the brandy as you can get in to fill up the kilner jar to within 1/4" of top. With handle of wooden spoon stir ingredients repeatedly over next few days until all sugar has dissolved. Clap lid on firmly and store in a cool dry place for next 3 - 4 months. Voila!!! - Slivovitch liqueuer!!!

I still have about 2.5 litres of schnapps we made some nine years ago Uncle Joe. My wife made plum crumble last weekend and with vanilla ice cream it was delicious. I think I'll wait and see what the neighbours leave and then make some jam. I only know of one other garden where we live that has a plum tree in it. I often think I should charge an entrance fee with the neighbours coming and going with their buckets.

They look more like damsons than plumbs
I am toying with the idea of making some damson gin this year (I have an unopened bottle of gin going spare) but as I can no longer drink alcohol I will have to give it all away..

One good thing with crumbles is they freeze so well, when we get a lot of any fruit I make as many crumbles as I have dishes for and freeze them. Last ages that way.

Yes 1 kilo of sugar - (under imperial measure that would equate to 2 LB. We've been buying sugar in this weight for very many years.
