Re: What are you having for lunch/dinner?

Trying to reduce the carbs so today was:

Breakfast - one piece of smoked mackerel and one slice of seeded bread.
Lunch - half a can of broccoli and stilton soup, one slice of seeded bread.
Snack - a few grapes and one marmite cheddar bite
Supper - 3 thin Richmond sausages, two small fried tomatoes, half a small can of baked beans and scrambled eggs.
Dessert - strawberries and double cream, no added sugar.

And a few oatcakes in between.

Have shoulder of lamb cooking in the slow cooker since last night. Later this morning will peel and chop accompaying vegetables and roast them in the oven. Have cherry lattice pastry and either icecream or custard for 'pudding'.

Got some cooked chicken defrosting, then will look at what vegetables to do. Will need to cut down on the accompanying high carb ones...I'd generally have a pile of potatoes, sweet potatoes and parsnips. All very naughty, I seem to remember. Also have green veg available.

Probably rest of canned soup for lunch.

Re: What are you having for lunch/dinner?

I have a lovely piece of gammon simmering on the slow burner - will keep the water (unless it is salty) to make carrot and orange soup tomorrow.

For today's dinner I have put diced chicken into a casserole dish with chicken stock, mushrooms, chick peas, kidney beans, onions, garlic, celery, tomatoes and herbs. Will leave it to simmer until dinner time tonight.

Will probably have cheese on toast for lunch.

Lunch was fabulous!!! - the lamb just fell off the bone and didn't need cutting - with the remains of the joint - will use it to make a lamb stew with suet dumplings tomorrow.
