Suggestions please

Since Christmas Gracie's decided she wants school meals so no coming home at lunch time

Anyway it's quite surprised me the variety they are giving her, she's really extending her palette.

Question is I'm a very plain English cook. She's asking for vegetable curry and vegetable goulash.

Anyone got any tasty easy recipes for these exotics ? Or anything else a young exploring vegetarian might like ?

Hi Julie,

Boil until tender, cubed potato, carrots, courgettes, onions, mushrooms, fine beans.

In a saucepan, fry onions, garlic, ginger until soft, add:

1 tea. curry powder,
1 tea. gram masala.
1 tea. turmeric.
1 tea. cumin.
pinch of chilli, salt.

Drain the fat away from the onions, add your drained vegetables to the onions and the spices, stir, then add 1/4 cup of coconut cream, simmer. Once cooked add 1 tea. of natural greek yogurt to make it nice and smooth.

These are similar to some of my recipes Julie, I always change things a bit but will post these so you you could print them out..

I use butter not spread for the roux in the sauce here...

..these are nice to, I make a different dipping sauce though I don't like Ketchup.

for this curry I also add chillies and pour the bean water away. I also use a mixture of beans butter/red kidney etc.

Quorn steaks or burgers, sliced very thinly and fried in olive oil make a great alternative to a Doner kebab. just serve with salad and chilli sauce in a pitta.

I can't help you with recipes Julie as I am a plain cook but it might be fun to try some of the recipe ideas together with your grandaughter since she has shown an interest.

You could buy a cheap vegetarin cook book in a charity shop and try some their recipes.

It's a vegetarian pretendy meat, made from mould and cultures, mushroom like growth. They extrude it into shapes and flavour it.

Sounds horrible but tastes nice.
