Never seen a fresh kipper. The Food program I watch sometimes was showing a netful of fresh-caught sardines the other night.

A kipper is a whole herring, that has been split in half, gutted, salted or pickled, and cold smoked. They are delicious. Do you not maybe get them in delis over your way DM?

Possibly; I've heard of pickled or smoked herrings; suspect they are carried here. How do you fix a pickled herring? (Azz said dumb questions were allowed here! )

Surely a pickled herring is a rollmop - Scandanavian style? Eaten 'raw' if that's how you describe it. 'Cooked' by the action of the vinegar but never subjected to any smoke or heat.
A smoked herring is a kipper or possibly a bloater, Arbroath Smokie etc, depending on how it is treated

You can eat pickled or soused herring raw but I prefer to cook them, when I worked as a docker we used to export them to America in wooden barrels and the stink off them was terrible.

Tonight..
Steak and mushroom pie with flaky pastry (I made a batch a couple of weeks ago and froze them, just have to add the top) ,
a small jack potato with lots of butter,
runner beans from the freezer.

Damsons (from the freezer) and custard
