What I find odd about the US state capitals is that apart from a few, they are not the names we would expect. For instance, you would think Las Vegas would be the capital of Nevada or that Houston would be the capital of Texas etc.
New York come to mind. New York (the city) dominates while the capitol is up the road a bit in Albany.
Many of the state capitols of today, WERE the main cities when the different states were formed. You are correct in that today, many of these capitol cities are overshadowed by places like La Vegas and Houston.
