Dead Easy - and this time I cheated by replacing the big list of spices with most of a jar of "Moroccan Seasoning" from Tesco. So much easier and actually very good.

The recipe I based it on is here but strangely it leaves out the list of 10-20 spices that you are supposed to rub over the diced lamb and leave in the fridge overnight! All the other recipes suggest you do that, and so do I. Dice the lamb, sprinkle lots of the spices over, mix with your hands, put some clingfilm over the top and leave in the fridge to absorb the flavours before browning the meat. Otherwise just follow the recipe. I doubled it and boned a leg that Tesco had on half price - yummy!

The couscous was yummy and so simple (put more harissa in than it says though). Got that recipe here.

This is one of the recipes I have in my "simple but impressive" collection for when I'm entertertaining.

Sorry, forgot to say, the one I made a few weeks back I added half a butternut squash about an hour from the end - just chopped into chunks and stirred it in. A....maz....ing!

And it's even better the next day!
