Linda, I think you have a handle on whats happening with you, well done for acknowledging that and knowing what will help


I listen to Radio Two here in England and they have a wonderful series about what makes you human

Todays speaker was Marion Keyes, an Irish Author who has suffered severe depression. Listening to her was wonderful as she never shied away from the goriness of depression. She admitted she had tried everything that was offered or suggested and the only thing that got her out from it was time

I don't know if you can find a pod cast of the show, it was the Jeremy Vine show on radio two today, its worth a listen I think

I don't know if I have a handle on it or not. Nothing makes sense to me anymore and and what you're supposed to do as opposed to what you want to do are two different things.

That's very true, that time is the only thing, really, that takes care of things. It doesn't necessarily always "heal", but it changes things enough to make them tolerable. And, in some cases, one can only hope for something like that.

One thing I do know is that life has a way of working itself out, one way or another. I tell myself that a lot, as well as telling myself that 'this too shall pass' and that's what keeps me going. That and my son. If it weren't for my baby, I really wouldn't have any purpose.

He is my reason for living.

And hey, do any of you have a nice recipe for cauliflower cheese? A couple of you have talked about it and I'm just curious how you make it and what type of cheese you use. I LOVE cauliflower (I'll even eat it raw) and would like a great recipe for cauliflower cheese, if you please

Linda, I just start with a basic all in one white sauce and I’m afraid I don’t measure So about a tablespoon of butter, all purpose flour and around 1/2 pint of milk, in a pan, bring to a slow boil whisking all the time till right consistency. Then as much cheddar as needed to taste with a teaspoon of English mustard, pepper and salt to taste

Pour over cooked cauliflower and into the oven till all hot and bubbly

Depending on who’s here, I like to give it a topping of fresh bread dumbs and grated Parmesan before I put in the oven for a nice bit of crunch

I also sometimes use Stilton or any other small off cuts of cheese lying in the fridge

I make my Cauliflower cheese exactly the same as Missy.

The English Mustard gives it just a little bit of a kick.

Todays its Chicken Curry and Rice.

I don't measure when I make a white sauce either. I just sort of wing it until I have the right amount and the right consistency.

When you say mustard, do you mean dry mustard or prepared mustard? I may use a bit of dry, but I don't think I'd enjoy prepared mustard in it (although who knows, maybe I would) especially if it's spicy. The man of the house here loves Colman's, that's the only mustard he'll eat when he wants mustard with a kick. But I personally don't like it. It reminds me of those hot mustard packets you get with Chinese takeaway.

Whatever the case, I'm going to try this. Probably without the mustard, though.

Its Colmans I use, you just need a tiny amount, you won't taste it, it just gives a wee depth of flavour and just gives a little tinge of yellow to the sauce. I find an American yellow mustard is too vinegary for a sauce
