Old Dutch recipe (translated)
Pastry:
60 grams margarine
1/4 cup granulated sugar
1 large egg
1 cup flour
1 teaspoon baking powder
Pinch of salt
Ground cinnamon
Filling:
1 cup granulated sugar
2 Tablespoons margarine
3 large eggs, separated
1 litre milk
2 Tablespoons cornflour
3 Tablespoons self-raising flour
Pinch of salt
Method - Pastry :
Cream the margarine and sugar (until pale yellow), add the sugar and eggs and beat in. In a separate deep bowl, Sift together the flour, baking powder and salt. Add the dry ingredients to the egg mixture and mix to form a soft dough. Press the mixture into a flat greased deep pie dish. Set aside
Method - Filling:
Mix sugar, margarine and egg yolks. In a deep pan, make a slurry with the salt, cornflour and flour with about 250 ml of the milk to form a thin smooth paste. Place the remaining milk in a saucepan and bring it to boil. Take the saucepan of boiled milk off the stove and pour the milk mixture slowly into the cornflour paste. Return to the medium heat and keep stirring until the mixture boils, then add the sugar mixture stirring continuously to avoid burning for about two minutes.
Take the mixture (custard) off the stove. Beat the egg whites until stiff and fold into the custard mixture.
Pour the mixture into the pie dish lined with pastry. Sprinkle with ground cinnamon. Bake at 180 degrees for 30 minutes and refrigerate until ready to serve. Enjoy
