Lemon Meringue Pie

I just love lemon meringue pie but hardly ever make it for obvious reasons. Still, I'd like to know if anyone has ever made it from scratch?

What are "the obvious reasons" AC? Sheila makes them fairly often - but she likes baking.

My husband used to regularly make them, also did a version with a biscuit base which I have to say I preferred. His were gorgeous never known anyone make such tangy lemon filling !

Thanks Julie, I will definitely try it sometime. I put it in my favourites but have to say I'll probably cheat & use premade crust.

Yes I make it from scratch I also make a version called lemon meringue pots, ramekins with lemon and meringue without the pastry which the children love

I make a recipe similar to Delia's, I made another version last time which didn't contain the butter in the curd but it wasn't very nice.

Sounds yummy Meg! I know when I've made lemon meringue pie from the box, I can't help eat some dregs in the pot, yummy.
I just wanted a fairly easy recipe to try sometime for the filling only.

As a newcomer darlin' - you're probably not aware that there's a 10% food tax on anything you cook. Guess who has the unfortunate task of collecting that tax???
