Yes, we do find fossils from sea creatures high up in the mountains. However, there was one point you missed. Plate tectonics.
As sea creatures die they sink to the bottom of the ocean. Eventually they become fossils imbedded in the ocean floor. Over hundreds of millions of years, plate tectonics move the ocean floor which can be "uplifted" into mountains. Think earthquakes. Every time an earthquake happens the earth is moving. Thus, sea fossils can end up in the mountains but that has nothing to do with the sea levels.
Don't get me wrong. I agree that the sea levels have changed quite dramatically due to climate change over hundreds of thousands of years.
