And the winner is, baked pots, king Edwards to be precise, started in the micro to soften up, then finished in halogen which gives a hard brown crisp 'shell' with soft fluffy insides, and yes lashings of kerrigold olive oil based spread (which somehow tastes more buttery than any other spread have tried).

Oh and a little morsel of advice here, Do Not Freeze Carotts! They go rubbery and nasty.

Oh, that all sounds scrumptious.

I freeze our carrots every year. Is it possible they were overcooked before freezing? I've done that, and they were rubbery.

Only done carrots and parsnips.

They were totally raw. Have frozen raw caulli and raw broc before and thought carotts would be ok, although come to think of it, whenever have bought frozen mixed veggies which have included carotts they too have been rubbery.
