I'm here, - needed time to research my cookery books. Firstly, after washing thoroughly, the meat has to be thoroughly marinaded perhaps overnight - either in white wine for white meat or a strong red wine (preferably Port) for red meat. When ready for cooking, strain from marinade and reserve marinade for gravy later. place meat in a bowl, and add 1 Tblsp of plain flour - toss meat in flour and then add to a frying pan with an onion(chopped) and several garlic cloves (crushed) and 1 Tblsp of extra virgin olive oil. flash fry for approx 5 minutes and then scoop out and place in casserole dish. prepare and chop appropriate vegetables and add to frying pan. Add stock cube and gravy powder to marinade and stir vigorously. Add to frying pan and bring to boil. As sauce thickens, pour into casserole dish and place in a hot (190 c) oven for approx 90 - 120 minutes.
