While I enjoy cooking many different countries cuisines, I think that if I had to chose, I'd say that my Chicken Tettrazini is my #1 signature dish. (not those foul casseroles found on the www, but the real deal)

sautéed chicken breast pieces, ham chunks, sautéed mushrooms, creamy mushroom sauce with Marsala. Ladled over pasta. Covered with mozzarella cheese and flash broiled.
