Re: When is a pie not a pie?

I agree soggy bottoms are not nice
But soggy tops are awful, remember those flipping old Fray Bentos pies in metal tins?
The top was crusty on top and soggy underneath.
Seriously nasty.

At the risk of starting a controversy - I feel strongly that a true pie should be made with proper short crust pastry - none of this puff rubbish. I hate those "pies" you get in pubs with an enormous (but insubstantial) lump of puff pastry floating on top.

I agree, must be short crust pastry ,but having said that I am quite partial to a Fray Bentos Steak and Kidney pie Ruthio ,the soft pastry under the crispy top is yummy ...its just soggy bottoms I dont like especially when the pastry is part cooked blurghhhhh

I totally agree with you, should be pastry all round.

Also why do some bakers call it a Cornish Pastry when its just Mince inside, the Cornish Pastry I know, should have steak and potato inside.

A pie is a real pie if it's got 'Top Botty And Hips'

exactly - was walking along our beach front the other day and up front were two old 'biddies' with the soggiest bottoms I've ever seen - wobbling about all over the place they were to be sure to be sure!
