LENTIL LASAGNE



Ingredients

1/2 oz butter
1 medium onion chopped
1 green pepper chopped
6 oz split red lentils
6 oz tinned tomatoes
1/2 pint stock
1/2 pint milk
2 tablespoons tomato puree
1 teaspoon mixed herbs
Black pepper
8 sheets of ready to cook lasagne
2 eggs
8 oz natural yoghurt
4 oz cheese

Method

Melt the butter in a saucepan
Add the onion and cook until soft.
Add the peppers, lentils, tomatoes, stock, half the milk, tomato puree, herbs and pepper.
Bring to the boil and simmer for 20 to 25 minutes until the lentils are soft.
Place half the lentil mixture in the base of a 10 x 8 inch ovenproof dish and cover with half of the lasagne.
Repeat the layers.
Whisk together the eggs, remaining milk and yoghurt.
Stir in half the cheese and pour over the lasagne.
Sprinkle the remaining cheese over the top and bake at 200 degrees centigrade, (400 degrees Fahrenheit, gas mark 6) for 35 to 40 minutes.

That does sound nice VM I do a version of Lasagne with roasted vegetables but yours would make a nice change ,

Something different to put on toast or a Bruschetta.

LENTIL SPREAD

Ingredients

1/2 pint water
6 oz split red lentils
1 tablespoon tomato puree
Basil leaves
Lemon juice
Salt and pepper

Method

Boil the lentils until all the water has been absorbed.
Beat in the tomato puree, juice, basil leaves and seasoning.
Chill before using.

Now that I no longer diet, and eating intuitively ( for books on this topic, try either ' I can make you thin ' by Paul McKenna or Intuitive Eating by Evelyn Tribole ), I no longer eat what I think I 'should ', I eat what I want as long as it is healthy and vegan and if possible organic.

So I shall put your name on them, they are all yours !

Lentils circa the early 70s.

Parents worry;

Henry this letter from julie/george says they eat lentils at university.

I`m not standing for that then,ruddy hippie influence and I bet the take drugs.
