I'm saving a little calorie room for a favorite of mine... a BLT with turkey (essentially a turkey club) on ciabatta bread. That and light soup - chicken rotini with vegetables. That's supper tonight and I'm looking forward to it.

Today for lunch I'm having baked salmon in a light garlic-butter sauce and this new thing I found in the frozen vegetables section. It's this stuff here, thought it sounded good...



The grains in there are whole grain bulgar wheat and whole grain tomato acini di pepe.

That looks good Linda.

I'm having problems in what to eat for supper about 7pm, we have our main dinner at lunchtime. I don't want to start cooking again in the evening, and I don't like Cottage Cheese etc.

Any ideas?

Well, the first thing that comes to mind is a slow cooker. You can toss all your ingredients into it and set it and forget it until suppertime. You could look for light & healthy recipes that you slow cook, then portion out and save them for meals for the week or even freeze for future use. Sometimes I'll make a pot of homemade vegetable soup and eat it the rest of the week. Sometimes I'll have the soup by itself and sometimes I'll have a side with it.

Another thing you could do is search recipe sites for quick and easy suppers or make-ahead suppers that you can just toss into the oven or throw on the stove when you're ready to eat.

Sandwiches and wraps also make nice, quick suppers that you could pair with soup or salad.

Here are some quick and healthy snacks/light meals that are 250 calories or less.

that looks perfect---not seen it in my supermarket..
