A Fishy alternative for use with pasta.
Sorry but as I cook 'by eye' there are no exact measurements, however I am sure this will not present a problem.
Required :
Tin chopped tomatoes
large onion - diced
garlic - crushed or chopped
tomato pure (imagine the accent lol)
white fish fillets, cut into bite sizes pieces, sufficient for however many eating.
fish stock cube (optional but adds lovely flavour)
Italian seasoning plus usual seasoning
1/4 - 1/2 cup grated parmesan.
sufficient pasta for how ever many being fed
Method/prep
put large pan of salted water on to boil
Sweat onions, add garlic and continue to sweat for 2 mins, add tomatoes, paste, stock, italian seasoning, salt/pepper cover and reduce heat.
When water has reached rolling boil add pasta. Tip for cooking pasta:-
After half the recommended cooking time, put lid on pan and turn off heat, the residual heat will finish the cooking.
Just before you drain the pasta, add the pieces of fish to the sauce and stir in and add the parmesan, cover sauce. Drain pasta and gently add to the sauce, folding it in so well coated. Serve and enjoy.
