Beetroot Apple Salad with Goats Cheese and Walnuts
Ingredients
4 large beetroots or 6 small.
6 medium apples
100g walnuts
2 tblsp olive oil
1 tblsp cider vinegar
150g goats' cheese (without rind, crumbled)
salt and pepper to taste
Method
1. Peel and boil the beetroot if using raw, then spiralise beetroot.
2. Add to a serving bowl with the walnuts, oil and vinegar. Mix well.
3. Spiralise the apples (I prefer to leave skin on) and add to bowl, along with goats' cheese and seasoning, turning once or twice to combine.
