Re: Muffins
I make muffins quite often because they are really quick to make as nothing needs to be weighed and are single portion and hand held treats.
My favourite are blueberry muffins with a cinnamon crumble topping:
1. For the muffins
1 and 1/2 cups plain flour
3/4 cup white sugar
1/2 teaspoon salt
2 teaspoons baking powder
1/3 cup vegetable oil (don’t use olive oil)
1 egg
1/3 cup milk
1 cup fresh blueberries
1.1. Mix together all dry ingredients
1.2. Mix together all wet ingredients
1.3. Add wet ingredients to dry ingredients (don’t overmix)
1.4. Fold the blueberries into the batter
1.5. Fill muffin tin (lined with muffin cases)
2. For the crumble topping:
1/2 cup white sugar
1/3 cup plain flour
1/4 cup butter, cubed
1 1/2 teaspoons ground cinnamon
2.1. Mix together all dry ingredients
2.2. Melt the butter
2.3. Add melted butter to dry ingredients and mix with a fork or fingers to form large crumb(think German Streusel rather than English crumble)
3. To bake:
3.1 top the muffins with the crumble
3.2 Bake on the middle shelf of a pre-heated oven at 190 C for 20-25 minutes
Delicious with or without the crumble, eaten warm or cold
