Had more pasta flour than I thought - so I made Ravioli instead of lasagna. Stuffed it with ricotta and chicken - and served in a cheesy herby sauce.

I love pasta - in all shapes, sizes and sauces - and it has to be one of the easiest things in the world to make - when you can find the flour!

Yes - milled very fine to "00" grade. An Italian chef once told me it was the best - so I always use it.

Ah, yes. "00" grade is hard to come by.
