4 cups sharp cheddar grated
1/2 cup fresh parmesan cheese

Directions :
Preheat oven to 200 degrees Celsius.
Cook macaroni according to package directions.
Drain and run under cold water.
Melt butter over medium heat in a large saucepan.
Whisk in flour and let cook 2 minutes while stirring.
Slowly whisk in cream, milk, mustard powder onion powder, salt and pepper to taste.

Remove from heat and stir in parmesan cheese & 3 cups cheddar cheese until melted.
Toss cheese sauce & macaroni noodles together.
Pour into a suitable greased oven dish.

Not sure what you mean by benefits ? IMO the main 'benefit" are all of those chewy bits of browned cheese all around the edges.
Recipe looks great.

It was very cheesy and very unhealthy but I ate it anyway and threw some greens on the side as a token of looking slightly healthy. Cheesy goodness- yum!

Oh it has to be baked! Nice crisp, chewy top is the crowning glory of this dish. In fact I often mix breadcrumbs with the grated cheese to sprinkle on the top before baking - makes it super crispy, yum!

I was feeling badly since it’s not a healthy meal so I skipped the additional carbs

Re: Baked Mac and cheese

Mac and cheese is my favorite comfort food. I make it much the same as your recipe. I top mine with rings of sliced green bell pepper with small tomato wedges for color and veggies.
