I also make my own version of a club sandwich when I am really hungry.
You need three slices of toast for this.
Bottom layer - buttered toast, sliced chicken breast, garlic mayonnaise.
Add another slice of toast - buttered on both sides.
On top of that put slices of tomato, cucumber, chopped scallions, grated cheese and a chutney of some kind.
Top it off with another slice of buttered toast !
I've cut down on bread but I still fancy a cheese and ham sandwich occasionally.
I take two wraps to work each night, usually chicken or tuna with lettuce and mayo.
