Red Cabbage Recipes

Red Cabbage with Apples

1 large red cabbage shredded
2 tablespoons sugar
1 teaspoon salt
4 fluid oz raspberry or redwine vinegar
2 oz butter
3 large cooking apples peeled, cored and diced
2 spring onions chopped
bay leaf
whole clove
2 1/2 pints boiling water

In a large bowl, combine the cabbage with the sugar, salt and vinegar. Toss until the cabbage is evenly coated with the vinegare mixture.
In a large casserole melt the butter, add the apples, onions and cook over a ver low heat for 8 minutes stirring frequently. Add the cabbage and vinegar mixture, the bay leaf and the clove. Stir in the boiling water and cover and simmer over a very low heat for 90 mins.
You can then add red wine and blackberry jam about 2 fluid oz of wine and four tablespoons of blackberry jam. This can be served as a vegetable hot or put into a jar to eat with cold meats.




Beetroot and Cabbage Borscht

butter or margarine,
2 rashers of bacon, chopped,
1lb cooked beetroot peeled and diced
2 tablespoons flour
2 tablespoons vinegar
1 1/2llbs red cabbage finely shredded
bay leaf
1 clove of garlic crushed
3 1/2 pints of beef stock
salt and pepper
1 lb spicy sausages chopped (optional)
1/4 pint sour cream

Heat the butter and fry the bacon add the beetroot and toss it for 1 min. Add the flour and stir well off the heat. Return to the heat and add the vinegar, mixing well.
Add the cabbage, bay leaf, garlic, sugar, stock salt and pepper. Bring to the boil and then simmer covered for 1 hour adding a little more stock if necessary. If you are using the sausages, add them 5 minutes before serving. Serve hot with a generous dollop of sour cream in each bowl.
