Bacon suet pudding.

Something to warm the cockles during this coming winter:

Bacon suet pudding.

Make Suet pastry and roll out flat with rolling pin (or empty milk bottle). Place strips of bacon (streaky bacon is better than back rashers for this recipe). Sprinkle over: Sage & Onion, Parsley & Thyme stuffing mix. Roll pastry into a sausage shape and wrap tightly in pudding cloth and/or foil so as to make it completely water-proof. Place in saucepan or steamer and cook for approx 90 mins. Do NOT allow saucepan or steamer to boil dry.

Serve with boiled potatoes, cabbage/sprouts and gravy. Absolutely Fabulous!!!
