Once the cold feed to the heater has been closed, water will still come out of the hot tap until the heater has been drained.

No It Wont. The cylinder will remain full as the hot water take off is from the top of the cylinder. You will only have to empty the water in the HW pipe and the vent pipe over the tank, half a bucket full.

Yes open all taps to allow any trail of water out, but shut the downstairs ones before turning on again.

Thank you

Will maybe think about tackling it tomorrow but I have to make sure we have all the relevant tools in place first and that cats do not come and help

Surprised you have had a dripping tap for years when normally
that means you just need a new washer about 40p at the shops???
Or that's what they were.
You just need the wrench to hold the tap at the top and unscrew it
to look inside take the old washer out and put the new washer in.
Mind you if your taps are about 20 year old you might need new ones
now. Leaking taps lose lots of water over a week etc so hope you
are not on a meter???

Had a meter installed a few months ago !

The taps date from the late 1970/80s !

Rachel I don't want to rain on your parade but just be aware that nuts and screws that haven't been moved for many years can provide problems even for a professional, and if something decides to shear off rather than unscrew then you can end up with a much bigger bill than your original quote. Can of worms is a frequently used term in these situations.
So O.K., if you are competent diyers with some knowledge of pipes and a good tool kit then fine by all means have a go, but if you are complete novices then I would counsel to get a professional in and see how it is done this time so that you've a better idea in the future.
