I had chicken salad yesterday for lunch. Made with red grapes and diced apples. It was really good.

Tonight for dinner I'm having shrimp, pineapple and avocado in small tortillas.

I had Chinese today as well

In my defence, all I had eaten since Friday was a slice of toast on Saturday and a sausage in a bap on Sunday so today I was in dire need of carbs and Chinese hit the spot

Hit the spot for me too. But I'm doing a little better for dinner. Having bean soup and a wrap with tomatoes, onion and a little bit of mayo.

I'm having a favorite comfort food of mine today - deep-fried chicken livers with mashed potatoes and panko-coated zucchini slices. This will definitely be my biggest meal of the day.

I loooooooove salmon cakes. One of my favorite things.

Cooking the chicken livers is easy. I simply dredge them into seasoned flour, then into beaten egg, then back into the flour and then into the oil and I fry them until they're crispy and crunchy on the outside, but well done on the inside. Some people like their livers still a little pink, but I don't. I love rare steak, but I think things like chicken livers should be fully cooked.

The zucchini (courgette) I cut into slices at desired thickness. Then I dip the slices into beaten egg, then into bread crumbs (today I used panko) and then pan-fry in a small amount of oil until they're golden. You can use any type of bread crumbs you wish. Fried zucchini is one of my favorite summertime treats.
